Pecan Butter Balls

Pecan Butter Balls
2 cups Flour, sifted
1/4 cup Sugar
1/2 tsp Salt
1 cup Butter
2 tsp Vanilla extract
2 cups Pecans, finely chopped
Preheat oven to 325°.
Combine dry ingredients and work in butter and vanilla. Add nuts and mix well. Shape into 1" balls. Bake on ungreased cookie sheet at 325° for about 25 minutes. Roll in granulated or powdered sugar while warm. Store in tin box between layers of wax paper.

Date: 2006-11-27 03:10 pm (UTC)I have recipes for Christmas pudding, Christmas cake and one for mincemeat that date back over a hundred years...ex's Mum passed them on to me some years ago. They were originally used by ex's great grandmother. A bit time consuming, but the results surpass anything you can buy in the shops.

Date: 2006-11-27 08:58 pm (UTC)I tried the canned mincemeat last year but it just isn't the same as the real thing.
I do have my grandmother's recipe for REAL mincemeat but I've never made it. I'm sure it is very unhealthy, with suet as an ingredient but it was VERY delicious. We'd eat it in pies, also by itself, either hot or cold.
The measurements in the recipe are a little strange, as they are all multiples of the amount of cooked meat, plus she used slightly fermented cider. I don't know where I'd get that these days.
If you make mincemeat from scratch, perhaps you can lend me your expertise. I'd love to try, though I know my recipe has to be cut way down because she made a huge pot of mincemeat and then canned it.
BTW, she was from Nova Scotia and had an English/Scottish/Irish background.

Date: 2006-11-27 10:32 pm (UTC)I would try using hard cider, or half hard cider/half apple juice. The fermentation is what gives hard cider its alcohol content (which is pretty low for most brands, compared to wine and liquor) :-)
