Sounds yummy. I assume Vanilla refers to Vanilla essence. Might have to give those a go.

Question...do Americans have traditional Christmas pudding on Christmas day or do you have an alternative and do you have mince pies and brandy or rum butter?

We do have mince pies ... my Mom always used to make them for Thanksgiving and Christmas. I would always have a small slice with vanilla ice cream on top ... yummy! I don't know many people nowadays who make them.

The vanilla is an extract ... it's liquid flavoring.

I still make my own mince pies...served with brandy butter and/or cream. Eeekkk!!! I just gained 7lbs just thinking about it...LOL!

I have recipes for Christmas pudding, Christmas cake and one for mincemeat that date back over a hundred years...ex's Mum passed them on to me some years ago. They were originally used by ex's great grandmother. A bit time consuming, but the results surpass anything you can buy in the shops.

Nothing's better than homemade - and everyone loves the extra time and effort people put into homemade gifts :)

I LOVE mincemeat, that is the homemade variety as made by my grandmother.

I tried the canned mincemeat last year but it just isn't the same as the real thing.

I do have my grandmother's recipe for REAL mincemeat but I've never made it. I'm sure it is very unhealthy, with suet as an ingredient but it was VERY delicious. We'd eat it in pies, also by itself, either hot or cold.

The measurements in the recipe are a little strange, as they are all multiples of the amount of cooked meat, plus she used slightly fermented cider. I don't know where I'd get that these days.

If you make mincemeat from scratch, perhaps you can lend me your expertise. I'd love to try, though I know my recipe has to be cut way down because she made a huge pot of mincemeat and then canned it.

BTW, she was from Nova Scotia and had an English/Scottish/Irish background.

she used slightly fermented cider. I don't know where I'd get that these days.

I would try using hard cider, or half hard cider/half apple juice. The fermentation is what gives hard cider its alcohol content (which is pretty low for most brands, compared to wine and liquor) :-)

No traditions of Christmas pudding here. I guess it's all a matter of what traditions you grew up with?

They are yummy cookies!

Do you think it would work if I substituted chopped chocolate for the pecans?

I can't imagine these cookies without nuts, but try it and let me know?

Would you believe I read this recipe as "Peanut Butter Balls." It seems ridiculous to leave out the pecans in "Pecan Butter Balls."

I can see that. Especially as the no bake Peanut Butter balls are one of the first recipes that kids are taught to make in the modern equivalent of Home Ec.

I think the chocolate would just melt where the pecans add consistency. But ADDING chocolate would probably be great. You MUST experiment and let us know. :)

Pffffffffffffft! ;p

Willpower???!!! What willpower?! I'll end up making two batches for myself for every batch I make to give away. I'm dooooooooooomed! But I will definitely make some and give away in nice wrappings or boxes. It's a great idea for a gift for Christmas.

The cookies sound fabulous. I've copied down the recipe. I hate to think of the number of calories, though, with all that butter and pecans. But, what the heck! Calories are for Christmas.
